Ingredients
  1. 2 lbs cut-up chicken breast (1 1/2" thick)
  2. 1 can 8-12 oz Coconut Milk
  3. 1 tbsp red curry paste
  4. 5-10 basil leaves
  5. 1/4 cup fish sauce
  6. 2 tbsp sugar
  7. 2 jalapeno peppers (thinly sliced with seeds removed)
  8. 1 red bell pepper (thinly sliced)
  9. 1 medium red or spanish onion )thinly sliced)
  10. 1 cup frozen peas
  11. Jasmin rice
Instructions
  1. Boil coconut milk and mix in red curry paste. Mix well. Add sugar, Add chicken, fish sauce, jalapeño peppers and onion. Let cook for 15-20 minutes with lid on at low heat. 5-7 minutes before serving add bell peppers, basil leaves and frozen peas. Serve with Jasmine rice.
