Ingredients
  1. 3 pkg corn tortillas
  2. 2 cans tomato paste
  3. 2 pkg enchiladas pkg sauce
  4. 1 white onion
  5. 1 1/2 lbs ground beef (degrease in 3 qt w/insert)
  6. 1 lb Monterey jack cheese (shredded on #1 cone)
  7. 1 lb med sharp cheese (shredded on #1 cone)
Instructions
  1. Brown ground beef (done through degreasing in #3 w/insert) then add onion. Mix enchiladas sauce mix in 3 quart and heat. Wet each tortillas with sauce until soft. Rool up tortillas with 1 tbsp of cheese inside. Fill skillet 2 layers deep with stuffed tortillas. Spread ground beef, onions, sauce and chess over tortillas and cook at 300 (electric skillet) until valve clicks. Turn down to simmer and cook for 10-15 minutes.
